• Speedibake® Rustic Ciabatta Loaf
  • 2 tomatoes, diced
  • 2 teaspoons Olive Oil
  • ¼ red onion, finely diced
  • 6 basil leaves
  • ¼ cup feta
  • 1 clove garlic
  • ¼ lemon
  • Salt and pepper


  1. Slice rustic ciabatta loaf into 1cm thick slices, rub garlic glove on one side of bread then drizzle a small amount of olive oil over this same side. Grill (or char grill if you have one) both sides of the bread and then set aside.
  2. In a bowl add diced tomatoes and onion, squeeze lemon juice, season with salt and pepper, add olive oil then gently combine. Lastly add feta and gently mix again.
  3. To Serve: With garlic and oil brushed side facing up, top slices with tomato, onion and feta mix. Finally add basil leaves (don’t add the leaves to the bowl mix or they will discolour).
